Altitude start and progression

I’m going to be at altitude for the first time next week. I live on the east coast and I’m traveling to colorado to hike around the rocky mountains for a week. What is a safe elevation to reach for the first couple days? By the end of the week i’d like to be able to hike/hang out at 12,000ft since i found that a lot of the most fun looking trails and views are around that elevation. I’ll be driving to/from the mountains each day and sleeping at a lower altitude if that helps.
